Spiedes are a dish that originated in upstate New York, and are traditionally made with pork. These delicious bites of chicken are tender, juicy and have just a little tangy bite from all the lemon and garlic. They are traditionally served with Italian bread, but they go great with just about anything. They are delicious served with fresh garlicky yogurt sauce.
Serves: 6-8
Prep time: 15 mins plus 3 hrs to chill
Cook time: 7-10 mins
Ingredients:
2 pounds boneless skinless chicken breast
Marinade:
¼ cup extra virgin olive oil
¼ cup red wine vinegar
1 lemon, juiced or about 3-4 T lemon juice
4 cloves garlic, minced
1 Tablespoon dried parsley
1 ½ teaspoon dried oregano
½ teaspoon sea salt
½ teaspoon black pepper
Directions
1. Cut the chicken into 1 inch cubes. Just a little bigger than bite size.
2. In a large bowl make the marinade- combine the oil, vinegar, lemon juice, garlic, parsley, oregano, salt and pepper.
3. Add the chicken to the bowl and stir to coat well. Cover and refrigerate for at least 3 hours or overnight (up to 2 days).
4. To cook- if using a bbq, push chicken onto skewers and grill the chicken over high heat for 5-7 mins, or until cooked through. You can also cook the chicken in a skillet over medium high heat for 3-4 mins per side or until a golden brown crust forms and chicken is cooked through.
Garlicky Yogurt Sauce
Ingredients
1 cup 2% plain Greek yogurt
¼ cup chopped parsley
2 cloves garlic, chopped
Juice of 1 lemon, or 3-4 tablespoons lemon juice
¼ teaspoon salt
¼ teaspoon black pepper
Directions
1. In a medium bowl combine the yogurt, parsley, garlic, lemon juice, salt and pepper.
