Balsamic Marinated Berries

This dish is so incredibly easy and sophisticated at the same time. It's vibrant in color and layered with flavor. Be sure to use a high quality balsamic vinegar, one that has a mild tartness rather than a strong acidity. When looking at the ingredient list, look for grape must, tradizionale. Cheaper vinegars will be combined with other vinegar, flavorings and other ingredients.

Prep time: 10 mins

Serves: 6

Ingredients:

2 cups fresh strawberries

1 cup fresh blueberries

1 cup fresh raspberries

1 cup fresh blackberries

1 ½ tablespoons good balsamic vinegar

1 tablespoon sugar

1-2 T fresh mint for garnish (optional)

Directions:

Using a colander, rinse strawberries, blueberries, raspberries and blackberries under cold water. Spread out all of the fruit on a towel to dry.

In a small bowl whisk together sugar and balsamic vinegar.

Place berries in a serving bowl. Drizzle balsamic mixture over berries and gently toss together. Marinade in the fridge or countertop for at least 30 mins. Garnish with mint leaves. Serve room temperature or cold within 2-3 days.
