Garlicky Herbed Bruschetta

This bruschetta is the perfect, light, yet flavorful appetizer paired with toasted whole grain bread for social gatherings. It can also be used as a beautiful topping for grilled chicken, fish or shrimp. You can easily use other fresh herbs on hand such as rosemary, thyme or basil. Just be sure to lightly chop rosemary or basil as their leaves are a bit larger. This dish is also great as a quick light lunch or snack.

Garlicky Herbed Bruschetta Ingredients

  • 4 tablespoons extra virgin olive oil

  • 4 cloves garlic, thinly sliced

  • 1/4 cup fresh oregano leaves

  • 2 cups chopped roma or grape tomatoes

  • 1 tablespoon lemon juice

  • ¼ teaspoon salt

  • ½ teaspoon black pepper

Directions:

  1. In a medium pan over low heat add the olive oil and garlic slices and oregano. Saute for 30-60 seconds or until garlic is fragrant. Be careful as the garlic can easily burn. Remove from heat.

  2. To a medium bowl gently toss the chopped tomatoes, lemon juice, salt and pepper. Carefully pour the warm olive oil, garlic and herbs over the tomatoes. Mix until incorporated.

  3. Serve with toasted whole grain bread or over cooked chicken breasts.
