There is nothing like the smell of freshly baked banana bread. In our house, we love to eat it after cooling with a pat of vegan butter spread or peanut butter. The typical banana bread recipe calls for loads of sugar, butter and white flour. This recipe switches out those ingredients for more brain healthy foods, but keeps the taste to perfection. The perfect way to use up those overripe bananas.
Banana Bread Ingredients
Yields 1 loaf

Cook time: 55mins
1/3 cup extra virgin olive oil
1/3 cup maple syrup
1/4 cup sugar
2-3 medium ripe bananas mashed, or about 1 cup mashed banana
2 eggs, lightly beaten
¼ cup oat milk, or milk of choice
1 teaspoon baking soda
1 teaspoon vanilla extract
¼ teaspoon salt
½ teaspoon ground cinnamon
1 cup spelt or oat flour
1 cup whole wheat pastry flour (or whole wheat flour)
Optional mix-ins: ½ cup chocolate chips, ½ cup chopped walnuts
Directions:
Preheat oven to 325 degrees F.
Lightly grease with olive oil or spray a 9x5 inch loaf pan.
In a large bowl, whisk the oil, maple syrup and sugar together. Add the eggs and beat well, then whisk in the mashed bananas and milk.
Add in the baking soda, vanilla extract, salt and cinnamon. Stir to combine.
Slowly stir in the flour folding it in until just combined, don’t over mix.
Add in chocolate chips and walnuts if using.
Pour the batter into your greased loaf pan.
Bake for 50-60mins or until a toothpick inserted into the center comes out clean. Let cool for at least 10mins. Run a butter knife along edges to loosen the bread from the pan.
