Spicy Black Bean Hummus

This spicy black bean hummus subs out chickpeas from traditional hummus and adds in black beans. This dip gets eaten almost as quickly as I can make it. This recipe calls for pickled jalapeños to add the spice, but you could use fresh jalapeños if you prefer. If you have heat sensitive eaters, you can forgo the jalapeños altogether and this hummus is just as tasty.
Spicy Black Bean Hummus Ingredients
Yields 4 Servings
Prep time: 5 mins
Ingredients:
1-15 ounce can black beans rinsed and drained, or 1 ½ cups black beans
2 Tablespoons tahini
Juice of 1 lime or 2 Tablespoons lime juice
3 T cilantro
1 clove garlic
4 T olive oil
2 teaspoons ground coriander
2 teaspoons ground cumin
1/2 teaspoon salt or salt to taste
¼ cup sliced pickled jalapeños, plus 3-4 slices for garnish
Directions
In a food processor combine black beans, tahini, lime juice, 2 tablespoons cilantro, garlic, olive oil, ground coriander, ground cumin and salt. Blend until smooth (or slightly chunky if you prefer!). Add in sliced pickled jalapeños and pulse until incorporated. Garnish with cilantro and a few slices of pickled jalapeños. Serve with tortilla chips and fresh veggies.
