Ingredients:
Dry Ingredients:
2 cups spelt flour or whole wheat flour
1 tablespoon baking powder
¼ teaspoon salt
1 tablespoon ground cinnamon
1/8 teaspoon ground nutmeg
1/8 teaspoon ground clove
Wet Ingredients:
1.5 cups milk of choice
2 tablespoons chia seeds
2/3 cup pumpkin puree
1 teaspoon pure vanilla extract
2 eggs, beaten
2 tablespoons pure maple syrup
4 tablespoons heart healthy butter spread
Optional toppings: maple syrup, butter spread, hemp seeds, peanut butter, berries
Directions
In a medium size bowl whisk together flour, baking powder, salt, cinnamon, nutmeg, and clove. Set aside.
In a large bowl mix together milk, chia seeds, pumpkin puree, vanilla extract, eggs and maple syrup.
Add dry ingredients to wet ingredients and gently mix together.
Using a skillet pan over medium heat, add 1 tablespoon of butter spread, let it melt and sizzle. Using a ¼ cup measuring cup, add batter to the pan, leaving a little space between each pancake.
Cook for 1-2 minutes, or until little bubbles form. Flip and cook another 30-60 seconds. Remove from pan.
Continue cooking until all the batter is gone, adding more butter spread as needed.
Top with maple syrup, warm berries, peanut butter or honey.
