A simple side dish of sauteed greens is a perfect way to get in a hearty dose of your green leafy vegetables. I love having a bowl of these greens after I’ve been traveling and haven’t been eating as well. Swiss chard or Tuscan kale work well for this dish as they are both sturdy greens. This dish goes great with broiled artic char, tossed into some spaghetti, or blended with your favorite grains such as brown rice, farro or quinoa.
Sauteed Greens Ingredients
Serves: 6
Prep time: 5minutes
Cook time: 8 minutes
Ingredients:
2 tablespoons olive oil
1 small shallot, chopped
1 bunch rainbow swiss chard , rinsed and cut into ½ inch pieces or
1 bunch tuscan kale, rinsed, stems removed and cut into ½ inch pieces
1 clove garlic, mashed
¼ teaspoon salt
Directions
Heat oil in a medium pan over medium-low heat. Add shallot and cook until translucent, about 2-3minutes.
Add the swiss chard (or kale). Saute for 2-3mins or until just slightly wilted.
Add in mashed garlic and saute another minute. Sprinkle with salt.
