MIND Points: 1 Fsh, 1 LG, 1 EVOO, 1 OV, 1 Nut

Ingredients:

1 6-ounce can yellowfin tuna, strained (or sub 4 ounces salmon)

2 cups spinach, roughly chopped

2 tablespoons extra virgin olive oil

Juice of 1/2 lemon or 1.5 tablespoons lemon juice

1/4 cup green or kalamata olives

1 cup halved cherry tomatoes

2 tablespoons almonds

2 tablespoons pumpkin seeds

2 tablespoons dried cranberries

Optional: 2 tablespoons light feta cheese, 1 tablespoon fresh dill or parsley

Directions

  1. In a salad bowl combine the tuna and chopped spinach. Top with olive oil and lemon juice and lightly mix together.

  2. Add olives, tomatoes and additional toppings if using such as nuts/seeds, light feta cheese, and fresh herbs.

Serve with crusty whole grain bread, crackers, or cup of soup.
