Ingredients:
1 6-ounce can yellowfin tuna, strained (or sub 4 ounces salmon)
2 cups spinach, roughly chopped
2 tablespoons extra virgin olive oil
Juice of 1/2 lemon or 1.5 tablespoons lemon juice
1/4 cup green or kalamata olives
1 cup halved cherry tomatoes
2 tablespoons almonds
2 tablespoons pumpkin seeds
2 tablespoons dried cranberries
Optional: 2 tablespoons light feta cheese, 1 tablespoon fresh dill or parsley
Directions
In a salad bowl combine the tuna and chopped spinach. Top with olive oil and lemon juice and lightly mix together.
Add olives, tomatoes and additional toppings if using such as nuts/seeds, light feta cheese, and fresh herbs.
Serve with crusty whole grain bread, crackers, or cup of soup.
