Healthy Breakfast Tacos

These healthy breakfast tacos are one of my favorite go-to meals for busy mornings, weekend brunches, or even a quick lunch. Made with wholesome ingredients like eggs, beans, and whole grain tortillas, they're packed with protein, fiber, and brain-healthy nutrients inspired by the MIND Diet and Mediterranean diet.

One of the best things about this recipe is how easy it is to customize. Swap in your favorite beans, pile on fresh salsa, avocado, or herbs, or make them completely plant-based by leaving out the eggs. However you build them, these breakfast tacos are a simple, delicious way to start the day with ingredients that nourish both your body and your brain.

Ingredients:

4 corn tortillas

1 ½ tablespoons olive oil

4 eggs, whisked

1 cup pinto beans

¼ cup water

1 teaspoon cumin

½ teaspoon garlic powder

¼ teaspoon salt

1 medium avocado, sliced

4 tablespoons favorite salsa

Optional: 1 tablespoon chopped cilantro for garnish or red onion slices

Directions

1.   Heat ½ tablespoon oil in a medium pan over medium heat. Heat your tortillas, flipping after 30 seconds. Repeat until all tortillas are warmed, set aside on a plate and cover with a cloth napkin or tea towel.

2.   Add 1/2 tablespoon oil to the same pan over medium heat. Add beans, water, cumin, garlic powder and salt and warm through while gently stirring, about 2-3mins. Using a fork, lightly mash beans to desired consistency. Remove from pan.

3.   Add whisked eggs to the pan and stir frequently until well scrambled and cooked to desired doneness. Remove from heat.

4.   Using one tortilla at a time, spread ¼ of bean mixture onto tortilla, ¼ avocado slices, and ¼ of scrambled eggs. Top with 1 tablespoon of salsa and a sprinkle of cilantro.
