This healthy ramen noodle salad is a Midwest cookout classic and one of those recipes everyone asks for! It is simple, customizable, and packed with colorful vegetables, crunchy toasted ramen noodles, sesame seeds, and a flavorful ginger sesame dressing.

DIRECTIONS:

  • Gently crush the ramen noodles into small pieces by lightly punching the bag. Open the package discard the seasoning packet.

  • Heat a dry skillet over low heat and add the crushed ramen noodles and sesame seeds. Toast for 3–5 minutes, stirring often, until golden and fragrant. Remove from heat and set aside.

  • In a small bowl, whisk together the orange juice, olive oil, coconut aminos, toasted sesame oil, ginger, peanut butter, sambal, and lime juice until smooth.

  • Assemble the salad:

  • In a large bowl, combine the toasted ramen noodles and sesame seeds, cabbage, carrots, scallions, and cilantro. Pour the dressing over the vegetables and toss until evenly coated.

  • Let sit for 10 minutes to soften the noodles slightly. Eat at room temperature or cold. Store for up to 7 days in the refrigerator.
