This healthy ramen noodle salad is a Midwest cookout classic and one of those recipes everyone asks for! It is simple, customizable, and packed with colorful vegetables, crunchy toasted ramen noodles, sesame seeds, and a flavorful ginger sesame dressing.

INGREDIENTS:
For the Salad:
1 package Ramen noodles (about 3 ounces)- seasoning packet removed
2 tablespoons sesame seeds
1 cup shredded cabbage
1 cup grated carrots
⅓ cup chopped scallions
⅓ cup chopped cilantro
For the Dressing:
⅓ cup orange juice
4 tablespoons extra virgin olive oil
1 tablespoon coconut aminos or low-sodium soy sauce
2 tablespoons toasted sesame oil
1 tablespoons freshly grated ginger
2 tablespoons natural peanut butter
2 tablespoons sambal or favorite hot sauce
DIRECTIONS:
Gently crush the ramen noodles into small pieces by lightly punching the bag. Open the package discard the seasoning packet.
Heat a dry skillet over low heat and add the crushed ramen noodles and sesame seeds. Toast for 3–5 minutes, stirring often, until golden and fragrant. Remove from heat and set aside.
In a small bowl, whisk together the orange juice, olive oil, coconut aminos, toasted sesame oil, ginger, peanut butter, sambal, and lime juice until smooth.
Assemble the salad:
In a large bowl, combine the toasted ramen noodles and sesame seeds, cabbage, carrots, scallions, and cilantro. Pour the dressing over the vegetables and toss until evenly coated.
Let sit for 10 minutes to soften the noodles slightly. Eat at room temperature or cold. Store for up to 7 days in the refrigerator.
