INGREDIENTS:

Salmon and Kale:

  • 24 oz salmon (one large fillet or 4 small fillets, ~6 oz each)

  • Juice of 1 lime

  • 2 Tbsp stone ground mustard

  • 1⁄4 tsp salt

  • 1⁄4 tsp black pepper

  • 1 bunch curly kale, washed, stems removed and leaves torn into bite-size pieces

  • 2 Tbsp extra virgin olive oil (EVOO)

Berry Salsa

  • 2 cups chopped strawberries

  • 1⁄2 cup blueberries

  • 1⁄2 cup blackberries, halved

  • Juice of 1⁄2 lime

  • 1 Tbsp balsamic vinegar

  • 1 1⁄2 Tbsp finely chopped red onion

  • 1⁄4 cup fresh mint leaves, torn

DIRECTIONS:

  • Preheat oven to 375°F. Lightly oil or spray a baking pan.

  • Whisk lime juice, mustard, salt, and pepper; brush over salmon flesh. Place the salmon in center of pan.

  • Toss the kale with EVOO and a pinch of salt; massage leaves and arrange around salmon.

  • Roast 12 minutes, or until salmon is cooked to desired doneness.

  • While salmon cooks, combine berries, lime juice, balsamic, and red onion in a bowl. Gently mix, then fold in mint.

  • Serve salmon and kale topped with berry salsa, alongside your favorite grain or starchy vegetable.
